Recipe - Cranberry Cornmeal Muffins

1 cup Unbleached flour
Three fourths cup Cornmeal
1/3 cup Granulated sugar
2 teaspoon Baking powder
One fourth teaspoon Salt
1 Egg white whipped
Three fourths cup Buttermilk* at room
Temperature
One fourth cup Applesauce at room
Temperature
One half teaspoon Lemon peel grated
1 cup Cranberries chopped
Preheat oven at 350. Prepare 12 muffin tins with cooking spray and flour.
In a mixing bowl, combine flour, cornmeal, 1/3 cup sugar, baking powder,
and salt. In another mixing bowl, combine egg white, buttermilk,
applesauce, and lemon peel, and cranberries. Use an ice cream scoop to
fill muffin tins 2/3 full. Bake for 20 minutes or until golden.
