Recipe - Cracker N Vegetable Lasagna

1 md Red Bell Pepper; cut in
strips
1 small Onion; cut or sliced up
1 small Zucchini; cut or sliced up
One half teaspoon Oregano Leaves
1 tablespoon Fleischman's Margarine
32 Premium Saltine Crackers;
any kind
4 ounce Reduced Fat Cheddar Cheese;
shredded
2 cup Skim Milk
1 cup Egg Beaters® 99% Egg
Substitute
In large skillet, over medium heat, cook and stir red pepper, onion,
zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x
2inch baking pan, layer half each of the crackers, vegetable mixture and
cheese. Repeat layers, ending with cheese.
In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at
350° for 30 to 35 minutes or until knife inserted in center comes out
clean.
