Recipe - Crab Stock

2 pound Gumbo crabs; shelled, rinsed
and concasser (chopped)
One half pound Onions; rough chop
One half pound Leeks; rough chop
One half pound Celery; rough chop
4 Bay leaves
1 teaspoon Whole dried thyme
One half tablespoon White peppercorns; whole
1 Head garlic; cut in half
4 qt Very cold water
1. Place all ingredients in stock pot.
2. Bring to a boil, reduce heat and simmer for 45 minutes.
3. Skim carefully.
4. Remove from heat and strain.
Note: Do not allow stock to boil rapidly, it will cloud.
