Recipe - Couscous With Mushrooms

3 cup Defatted chicken or
Vegetable stock
2 cup Quickcooking couscous
3 Green onions thinly
Sliced
4 tablespoon Toasted pine nuts
One half cup Thinly cut or sliced up mushrooms
Minced parsley for
Garnish
1. In a large saucepan over mediumhigh heat, bring stock to a boil. Stir
in couscous, onions, nuts, and mushrooms.
2. Immediately remove from heat, cover, and let stand until liquid is
absorbed (5 minutes). Serve garnished with parsley.
