Recipe - Country Rice Pudding

2 cup Rice; cooked
1 One half cup Milk
1/8 teaspoon Salt
3 Eggs; beaten
1 teaspoon Vanilla
One half cup Brown sugar
1 teaspoon Butter
1 teaspoon Grated lemon rind & juice
One half cup Raisins
1 cup Crushed cookies
Preheat oven to 325F. In a bowl combine two cups cooked rice, milk, salt
and remaining ingredients, except the cookies. Blend continously. This is
more a folding action to avoid smashing the rice. Lightly oil the bottom of
a baking dish. Pour in the mixture. Cover with crushed cookies. Bake for 45
