Recipe - Country Oat Cake

CAKE
1 pack Spice cake mix (18.5 oz.)
1 cup Quaker Oats, uncooked
(quick or oldfashioned)
8 ounce Plain lowfat yogurt
3 Eggs; OR...
Three fourths cup Egg substitute
One fourth cup Vegetable oil
One fourth cup Water
1 One half cup Finely chopped apple
(about 2 medium)
TOPPING
1 cup Quaker Oats, uncooked
(quick or oldfashioned)
One half cup Brown sugar, firmly packed
One fourth cup Margarine or butter; melted
One half teaspoon Ground cinnamon
Whipped cream (optional)
Heat oven to 350 F. Grease and flour 13 x 9inch baking pan. For cake,
combine first six ingredients. Blend on low speed of electric mixer until
moistened; mix at medium speed 2 minutes. Stir in apple. Pour into
prepared pan. For topping, combine oats, brown sugar, margarine and
cinnamon; mix well. Sprinkle evenly over batter. Bake 40 to 45 minutes
or until wooden pick inserted in center comes out clean. Serve with
whipped cream, if desired.
