Recipe - Country Breakfast

4 cup Cubed cooked potatoes
One half cup Chopped green bell pepper
2 tablespoon Chopped onion
1/3 cup Margarine
Salt and pepper
4 Eggs
1 cup Shredded cheddar cheese;
shredded
(Cracker Barrel Brand)
Cook potatoes, green pepper and onion in margarine until lightly browned.
Season to taste. Break eggs over potato mixture; cover, cook until eggs are
done. Sprinkle with cheese; cover and heat until cheese melts.
notes Use O'Brien Potato Mix. Scramble the eggs (instead)
