Recipe - Country Beef Loaf

2 tablespoon Butter or margarine
One half pound Mushrooms, trimmed & cut or sliced up
Onion, minced (1 cup)
1 cup Thinly cut or sliced up celery
1 cup Shredded pared carrots
2 tablespoon Water
2 pound Ground beef
One half cup Sifted allpurpose flour
2 teaspoon Salt
1 teaspoon Seasoned salt
1 teaspoon Fines herbes
2 tablespoon Soy sauce
Combine butter or margarine, mushrooms, onion, celery, carrots, and water
in a mediumsize frying pan. Heat to boiling, cover and cook 10 minutes or
until vegetables are crispy tender. Combine ground beef, flour, salt,
seasoned salt, fines herbes, soy sauce, and cooked vegetable mixture in a
large bowl. Mix lightly, until wellblended. Shape into a rectangular loaf,
8 X 6, in a greased jellyroll pan. Bake in moderate over (350 degrees) for
1 hour, or until crustybrown. Sprinkle with chopped parsley before
serving, if you wish.
