Recipe - Country Apple Muffins With Streusel Topping

CAKE
2 tablespoon Oil
1 Egg
1 pack Pillsbury Nut or Cranberry
Quick Bread Mix
3 cup Apple pie filling; (from two
21ounce cans)
2 teaspoon Cinnamon
One half teaspoon Nutmeg
One half cup Chopped walnuts
SAUCE
One half cup Sugar
One half cup Firmly packed brown sugar
One half cup Butter or margarine
One half cup Whipping cream
1 teaspoon Vanilla
Heat oven to 325 degrees. Spray a 13by9inch pan with nonstick cooking
spray. In a large bowl, combine oil and egg; beat well. Add bread mix,
apple pie filling, cinnamon and nutmeg. Stir 5075 strokes, until mix is
moistened. Stir in chopped walnuts. Spoon into the sprayed pan; spread
evenly.
Bake 4555 minutes or until cake is golden brown and toothpick inserted in
center comes out clean. Cool 30 minutes.
Meanwhile, in a medium saucepan, mix sugars, butter and cream. Bring to a
boil, stirring occasionally. Remove from heat; stir in vanilla.
To serve, cut warm cake into squares and place on individual dessert
plates. Top each serving with warm sauce and, if desired, ice cream or
whipped cream. Serves 12.
(To prepare sauce in microwave, combine sugars, butter and cream in 4cup
microwavesafe measuring cup. Microwave on high for 3 minutes, stirring
once. Stir in vanilla.)
