Recipe - Country-Scalloped Tomatoes

One fourth cup Chopped onion
One fourth cup Chopped green pepper
One fourth cup Butter
6 md Tomatoes peeled and
Sliced
One half teaspoon Salt
One fourth teaspoon Pepper
1 tablespoon Sugar
1/8 teaspoon Dried basil (optional)
1 cup Toasted bread cubes
Cook onion and green pepper in butter until soft. Place half of the
tomatoes ina 2qt. casserole. Top with half of the seasonings. Add half the
bread cubes and all of the green pepper mixture. Top with remaining
tomatoes, seasonings, and bread cubes. Bake in moderate oven (350 degrees)
for 30 minutes. Serves 6. *I've used canned tomatoes, both home and store
bought to make this with. Drain them some.
