Recipe - Cottontail Carrots

2 pound Carrots; julienned
One fourth cup Apple juice
One fourth cup Butter or margarine
2 tablespoon Brown sugar
1 teaspoon Salt; optional
Minced fresh parsley
In a 2qt microwavesafe casserole, combine carrots and apple juice. Cover
and microwave on HIGH for 1012 minutes or until crisptender, stirring
once. Add butter, brown sugar and salt if desired; toss to coat. Sprinkle
with parsley.
