Recipe - Cornbread (Chef Du Jour)

1 1/3 cup Allpurpose flour
1 cup Plus 2 tablespoons corn
flour
2/3 cup Sugar
5 teaspoon Baking powder
One half teaspoon Salt
1 1/3 cup Milk
5 tablespoon Butter,; melted
1 teaspoon Bacon grease
1 Extralarge egg,; beaten
Preheat the oven to 350 degrees. In a large bowl stir together the flours,
sugar, baking powder, and salt. In another bowl mix together the milk,
butter, bacon grease, and egg. Add the dry ingredients to the wet and mix
until all lumps are dissolved. Pour the mixture into an 8 x 8inch baking
pan and bake until golden brown, about 50 to 60 minutes.~
Yield: 9 servings
