Recipe - Corn Pudding From Maine

17 ounce Creamed corn; low calorie
2 Eggs; lightly beaten
One half Skim milk
Salt and pepper to taste
2 tablespoon Margarine; melted
2 tablespoon Red pepper; chopped
2 tablespoon Onion; chopped
15 Crackers; crushed
Mix all ingredients except One fourth cup of the crushed crackers. Pour into 1 1/2
quart buttered casserole. Sprinkle with reserved cracker crumbs. Bake in
preheated 350 deg F oven for 1 hour or until center is firm.
NOTES : Recipe calls for Ritz crackers
