Recipe - Coquilles St Jacques Meuniere

2 pound Scallops
1 teaspoon Salt
One half teaspoon Pepper
One half teaspoon Paprika
2 cup Flour
1 One half cup Milk
4 cup Oil
One half cup Butter
1 tablespoon Parsley
2 teaspoon Lemon juice
Wash & dry scallops. Mix seasonings into flour. Heat oil to 375. Dip
scallops in milk, then into flour. Fry in oil until golden. Place in
dish. Slowly cook butter until it turns to hazelnutbrown color.
Sprinkle with parsley & lemon juice. Pour over scallops & serve.
