Recipe - Connies Tuna Cashew Casserole

1 pound Chicken breast cut into
Bite sized
1 cup Onions chopped
One half cup Celery cut or sliced up
One half cup Carrots cut or sliced up
20 ml Garlic crushed
1 cup Fresh Tomato Salsa recipe
To follow
28 ounce Can Tomatos
3 teaspoon Chili powder
One half teaspoon Cumin
2 cup Garbanzo Beans soaked*
1 lg Green Pepper cut or sliced up
4 Chicken Boullion cubes or
4 cup Broth
Salt & Pepper to taste
Brown chicken, onions & garlic in olive oil. Add all ingredients & simmer
1 hour. *If using canned garbanzo beans, add at the last 10 minutes of
