Recipe - Connies Eggs

10 cup Sliced, firm, ripe pears
Abt 5 lb.s
One half cup Finely chopped green pepper
1 One half cup Seedless raisins
4 cup Sugar
1 cup Chopped crystallized ginger
3 cup Cider vinegar
One half teaspoon Pickling salt
One half teaspoon Allspice berries
One half teaspoon Whole cloves
3 Cinnamon sticks 2" long
Place pears & next 6 ingredients in a saucepan. Tie allspice & cloves in a
cheesecloth bag & add along with cinnamon. Cook slowly until pears are
tender & mixture thick, about 1 hour.
Remove spices. Ladle into clean, hot halfpint jars, leaving One half inch
headspace. Seal. Process for 10 min in a boilingwater bath or steam
canner.
