Recipe - Confetti Cookies

1 tablespoon Olive oil
3 cup Frozen corn kernels
One half cup Diced red bell pepper
Three fourths teaspoon Chili powder
3 Scallions; thinly cut or sliced up
One fourth teaspoon Salt

Heat oil in a large skillet over medium heat. Add corn, bell pepper and
chili powder. Increase heat to mediumhigh and cook, stirring often, until
corn is hot, about 2 minutes. Stir in scallions and salt; cook 1 minute.
