Recipe - Cold Thin Noodles

1 One half cup Chicken broth
3 One half tablespoon Soy sauce
2 tablespoon Sugar
1 One half tablespoon Mirin* or dry sherry
1 tablespoon Fresh gingerroot; grated
8 ounce Thin Japanese noodles;
cooked & chilled
1 cup Cucumbers; thinly cut or sliced up
1 cn (11 oz) Mandarin oranges;
drained
One fourth cup Cilantro; chopped
* Mirin is a syrupy rice wine.
Mix broth, soy sauce, sugar and mirin or dry sherry in a small saucepan.
Heat about 1 minute; stirring constantly, until sugar dissolves. Add
gingerroot and chill.
To serve, pour over noodles; add cucmbers, oranges and cilantro; toss.
Makes 4 side dish servings.
