Recipe - Cold Salmon Platter With Tarragon Marinade

Ingredients:

3 Potatoes, cooked & halved
2 tablespoon Minced white onion
TARRAGON MARINADE
1 cn (7 1/2oz) salmon, drained &
Chunked
1 lg Sliced tomato
One half Sliced cucumber
2 Hard boiled eggs, halved
Chilled lettuce
1 tablespoon Minced parsley
1 tablespoon Chopped green onion

Sprinkle warm potato halves with onion: pour marinade over all. Cover
& refrigerate several hours. Drain, reserving marinade. Arrange
salmon, tomatoes, cucumbers & eggs on lettuce lined platter; sprinkle
parsley on potatoes & green onion on salmon. Serve with reserved
marinade.
