Categories: Breads, Coffee Walnut Chocolate Chip Muffins
Ingredients:

One half cup Butter
One half cup Brown sugar
One half cup White sugar
3 tablespoon Instant coffe (try instant
espresso!)
2 teaspoon Vanilla
2 Eggs
2/3 cup Milk
1 Three fourths cup Flour
One half teaspoon Salt
1 tablespoon Baking powder
Three fourths cup Semisweet chocolate chips
1 One half cup Coarsely chopped walnuts

Preheat oven to 350. Grease and flour 12 muffin pan cups (or use paper, but
they may stick a little). Cream butter with the sugars, coffee and vanilla.
Beat together eggs and milk. Combine the flour, salt, and baking powder.
Alternately add the wet and dry ingredients to the butter mixture. Stir
just to combine. Add the chips and walnuts. Fill the tins full. Bake for
2025 minutes. Cool 5 minutes, then remove from the tins and finish cooling
on racks. Recipe from The Frog Commissary Cookbook.
