Recipe - Coconut Granola Bars

2 One fourth cup Quickcooking oats; uncooked
1 cup Flaked coconut
One fourth cup Wheat germ
One fourth cup Plus 2 tablespoon butter or margarin

One fourth cup Brown sugar; firmly packed
One half cup Honey
One half cup Peanut butter
1 One half teaspoon Vanilla extract
One half cup Unsalted peanuts; chopped
One half cup Raisins
Recipe by: Southern Living Preparation Time: 0:30 Combine oats, coconut,
and wheat germ in a greased 9inch square pan. Bake at 325 degrees for 25
minutes, stirring occasionally. Set aside. Combine butter, sugar, and honey
in a medium saucepan; cook over medium heat, stirring occasionally, until
butter melts and sugar dissolves. Remove from heat, and add peanut butter
and vanilla, stirring until peanut butter melts. Pour over oat mixture. Add
peanuts and raisins, and stir well. (Mixture will seem dry at first;
continue stirring until moist.) Press mixture firmly into pan with greased
fingertips. Bake at 350 degrees for 12 minutes. Cool on a wire rack. Cut
into bars. Yield: 2 dozen.
