Recipe - Coconut-Pineapple Bars

Ingredients:

One half cup Margarine not diet
Three fourths cup Sugar
1 One fourth cup Allpurpose flour
1 One fourth pound Crushed pineapple
1 lg Egg
1 tablespoon Margarine
One half teaspoon Vanilla extract
3 One half ounce Dried coconut

1. Combine One half cup softened margarine and One fourth cup sugar in a small bowl.
Beat with an electric mixer set on medium speed until mixture is light and
fluffy. Gradually beat in flour to form a soft dough. 2. Press dough evenly
on bottom and One half inch up sides of 9 x 9 x 1Three fourths inch ungreased pan. Bake
in preheated 350degree oven for 15 minutes or until golden brown. Let
cool. 3. Drain pineapple VERY thoroughly. Spread pineapple over crust. 4.
Add rest of sugar to egg; beat until just blended. Add 1 tablespoon melted
margarine, vanilla and coconut. Spread mixture over pineapple. Bake 20
minutes longer, or until top is golden brown. Cool, then cut into 11/2
inch squares.

Yield: about 3 dozen.
