Recipe - Cochiti Green Chile Stew

2 pound Lean chuck; cut in small
cubes
2 tablespoon Oil
One half md Onion; chopped
4 md Potatoes; peeled and
minced
4 md Zucchini squash;
chopped
12 lg Green chiles; roasted
and peeled
1 teaspoon Garlic salt
1 teaspoon Salt
1 cup Water

Brown the chuck in a little oil in a large deep pan. Add the onions, saute
35 minutes. Add the potatoes. When the ingredients have browned pour off
any oil. Add the zucchini, if used, the chiles cut up, garlic salt, salt
and water. Bring to a boil and simmer for at least One half hour. Stew should be
eaten with a spoon like a hearty sooup.
