Recipe - Cobalt Cafe - Lime Cilantro Vinaigrette

1 tablespoon Minced shallot
3 tablespoon Chopped cilantro
1/3 cup Lime juice
1 teaspoon Dijon mustard
One fourth teaspoon White pepper
One half teaspoon Minced garlic
One half teaspoon Salt
One half teaspoon Sugar
1 cup Olive oil

In a food processor combine all ingredients except oil and process for 1
minute. With motor running, add oil in a slow, steady stream and process
until thick and creamy.

Refrigerate until ready to use.
