Recipe - Classic Chicken And Rice Casserole

Vegetable cooking spray
1 tablespoon Olive oil
1 pound Chicken white meat; pieces
2 cup Rice
1 md Onion; chopped
1 md Red bell pepper; chopped
1 md Green bell pepper; chopped
1 Clove garlic; minced
1 One half teaspoon Salt; optional
1 One half teaspoon Basil
3 One half cup Chicken stock
1 tablespoon Lime juice
1/8 teaspoon Ground saffron OR 1/2
teaspoon turmeric
1 Bay leaf
1 md Tomato; chopped
1 cup Frozen green peas; thawed
Spray rice cooker with vegetable nonstick spray. Add all ingredients
except tomato and green peas. Stir. Cover and cook until rice cooker shuts
off. Carefully remove cover. Fold in tomatoes and peas. Cover and allow to
steam for 10 minutes.
Serves 8. [PER SERVING: 305 calories; 7.2 g fat (total); 1.71 g saturated
fat; 35.1 mg cholesterol; 649 mg sodium]
