Recipe - Classic Banana Bread

Categories: B, N, Classic Banana Bread
Ingredients:

1 cup Granulated sugar
One half cup Shortening
2 Eggs
1 teaspoon Vanilla
1 cup Mashed ripe bananas 2 medium
2 cup Allpurpose flour
1 tablespoon Baking powder
One fourth teaspoon Salt
1 cup Chopped Diamond® walnuts

Heat oven to 350° F. Grease a 9 x 5inch loaf pan. Combine sugar,
shortening, eggs and vanilla; beat until light and fluffy. Blend in banana.
Combine flour, baking powder and salt. Add to banana mixture; stir just
until dry ingredients are moistened. Fold in walnuts. Spoon batter into
greased pan.

Bake for 60 to 70 minutes or until toothpick inserted in center comes out
clean. Cool in pan 10 minutes. Remove from pan and cool on wire rack.

Makes 1 loaf.

Notes: Editor's hint: My Mom taught me to save old bananas in the freezer
to make banana bread later. They don't look very good, but they make great
bread!
