Recipe - Claires Marinated Vegetables

1 cn (#2) Shoepeg Corn; drained
1 cn (#2) Leseur Peas; drained
1 cn (Small) Tiny Limas; drained
1 cn (Small) Green Beans; drained
1 cn (Small) Mushrooms; drained
1 small Green Pepper; chopped fine
1 small Red Bell Pepper; chopped
fine (Or Substitute
Pimento)
1 md Purple Onion; cut or sliced up
2 Carrots; minced
2 Stalks Celery; minced
Dressing
Three fourths cup Sugar
One fourth cup Oil
One half cup Tarragon Vinegar
Heat sugar, oil and vinegar until sugar dissolves. Cool to room
temperature. Mix with vegetables and chill 24 hours before serving.
Serves 12 as appetizer. Travels well.
