Recipe - Cinnamon Wheat Bran Pancakes

Three fourths cup Wheat flour
Three fourths cup Unbleached flour
Three fourths cup Wheat bran* unprocessed
2 tablespoon Granulated sugar
One half tablespoon Baking powder
One half tablespoon Baking soda
2 teaspoon Cinnamon
One fourth teaspoon Salt
2 Egg whites whipped
One fourth cup Applesauce at room
Temperature
1 One half cup Buttermilk* at room
Temperature
1 teaspoon Vanilla
Prepare skillet with cooking spray and heat on medium until hot. In a
mixing bowl, combine flour, wheat bran, baking powder, baking soda,
cinnamon, and salt. In another mixing bowl, combine egg whites,
applesauce, buttermilk, and vanilla. Mix wet ingredients with dry
ingredients just until moistened. Ladle in the batter, using 2 or more
tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for
2 minutes more. Repeat with remaining batter.
