Recipe - Cinnamon Raisin Waffles

3 tablespoon Granulated sugar
One half teaspoon Cinnamon
2 cup Unbleached flour
1 One half tablespoon Baking powder
One half teaspoon Baking soda
One half cup Granulated sugar
1 teaspoon Cinnamon
2 Egg whites whipped
1 Three fourths cup Buttermilk* at room
Temperature
One fourth cup Applesauce at room
Temperature
2 tablespoon Maple syrup
1 teaspoon Vanilla
One half teaspoon Orange extract
One half cup Raisins
Prepare waffle iron with cooking spray and heat up. In a small bowl,
combine the 3 tablespoons sugar and One half teaspoon cinnamon; set aside. In a
mixing bowl, combine flour, baking powder, baking soda, remaining sugar and
cinnamon. In another mixing bowl, combine egg whites, buttermilk,
applesauce, maple syrup, vanilla, orange extract, and raisins. Mix dry
ingredients with wet ingredients just until moistened. Pour enough batter
to fill twothirds of the waffle iron. Cook until crisp and golden brown.
Set aside. Repeat with remaining batter. Serve waffles with hot syrup.
Sprinkle sugar and cinnamon mixture over waffles.
