Recipe - Cinnamon-Orange Chicken

4 Chicken filets
1 teaspoon Cinnamon
One fourth teaspoon Nutmeg
2 teaspoon Olive oil
One half cup Onion; cut or sliced up
1 teaspoon Ginger
One half cup Orange juice
1 tablespoon Dried currants
1 tablespoon Capers; rinsed and drained

Rinse and dry chicken. Sprinkle with cinnamon and nutmeg. Heat oil in
medium skillet over mediumhigh heat. Add chicken and cook for 3 minutes,
or until lightly browned; turn chicken; add onion and ginger. Cook for 23
minutes, stirring frequently, until chicken is brown. Reduce heat; add
orange juice, currants and capers. Cover and simmer for 710 minutes until
chicken is thoroughly cooked. To serve, slice each chicken breast crosswise
and spoon remaining sauce evenly over top. Makes 4 servings.
