Recipe - Cilantro Sauce

6 Garlic cloves
1 Serrano or jalapeno chile
2 cup (about 2 bunches) cilantro
leaves
1 teaspoon Kosher salt
One fourth cup Fresh lime juice; (from 3 to
4 limes)
1/3 cup Extra virgin olive oil
Combine the garlic, chile, cilantro, salt and lime juice in a blender or
food processor. Blend or process until the mixture forms a smooth puree.
Transfer to a small bowl, stir in the olive oil, taste, and adjust the
seasonings.
Yield: About 1 One half cups
