Recipe - Cilantro Rice

1/3 cup Vegetable oil
One fourth cup Fresh lime juice
One half teaspoon Salt
One fourth teaspoon Pepper
3 cup Cooked longgrain white
rice; room temp
Three fourths cup Each green/red bell
peppers; chopped
1/3 cup Green onions; thinly cut or sliced up
One fourth cup Fresh cilantro; minced
1. Whisk the oil, lime juice, salt and pepper in a bowl until well blended.
2. Add remaining ingredients. Toss to coat with dressing.
Makes 5 cups or 8 servings.
