Recipe - Cilantro Guacamole

2 lg Avocados; seeded & peeled
1 small Tomato; finely chopped
One half small Red onion; finely chopped
One half small Red pepper; finely chopped
1 Jalapeno chili; finely
chopped
3 tablespoon Lime juice
1 Clove garlic; minced
1 tablespoon Fresh cilantro; finely
chopped
One half teaspoon Cumin
One fourth teaspoon Salt
1. Mash avocados in a mixing bowl. 2. Stir in remaining ingredients and
dash of pepper. 3. Cover and chill up to 8 hours.
Notes: Makes 2 cups, serve with tortilla chips.
