Recipe - Christmas Stuffed Potatoes

Ingredients:

1 1pound potato per person
Lotsa cheese (cheddar and
mozza)
1 small Onion or lotsa chives if
available fresh from garden
Real bacon, crisped and
loosely crumbled or cut
into large chunks
Real sour cream (most times
I cheat and use yogurt)
Real butter (same as with
sour cream)
Real cream (I use milk when
preparing during "Ordinary
Time")
Salt and pepper to taste

1. Bake the potatoes until done

2. Prepare bacon

2. Turn up oven to broil

3. Cut top One fourth off of potatoes (on the long side) Keep the tops!

4. Scoop out potato, but leave enought to make a sturdy shell

5. Mash the potatoes with the onion that has been minced, milk, salt,
pepper, butter, sour cream, most of the cheese and bacon.

6. Put a little bit of cheese and bacon in the bottom of each shell.

7. Stuff each shell with mashed potatoes.

8. Put some more cheese on top of potatoes. Put top of potato back on.
You guessed it more cheese (cheddar works best here for colour).

9. CAREFULLY place potatoes on a cookie sheet or pizza pan (something
sturdy) and broil for a few minutes (until cheese is melted and a little
bubbly).

10. Enjoy the leftover mashed potatoes! These are the Chef's portion.
