Recipe - Christmas Crawfish Stuffing

8 ounce Pk cornbread stuffing mix
One fourth pound Butter
1 cup Celery chopped
One half cup Bell pepper chopped
1/3 cup White onion chopped
1 pound Crawfish chop coarse
1 teaspoon Salt
2 teaspoon Prudhomme's Seafood Magic
Or
Creole seasoning
One half cup Green onion chopped
1 cn Water chestnuts cut or sliced up
1 cup Water
Melt butter and saute celery, bell pepper and onion until limp. Add the
crawfish tails, sprinkle with salt and Seafood Magic. Saute for 5 minutes.
Add the stuffing, water chestnuts, green onion and water. Mix well. Spoon
into a buttered dish or turkey cavity. Bake uncovered at 350~ for 25
minutes. Yields 6 cups
