Recipe - Chocolate Peanut Butter Pudding

1 cup Sugar
3 tablespoon Cornstarch
3 tablespoon Cocoa powder, heaping
3 tablespoon All purpose flour
3 cup Lowfat milk
3 Egg yolks
One half cup Chunky peanut butter
2 teaspoon Unsalted butter
1 teaspoon Vanilla extract
Combine first 4 ingredients in a heavy nonreactive saucepan. Stir in milk
and egg yolks. Bring to a boil over medium high heat, stirring constantly.
Immediately remove from heat. Stir in peanut butter, butter and vanilla
until butter is melted. Mix thoroughly. Transfer to a serving bowl. Press
plastic wrap over pudding surface to prevent skin from forming. Serve warm
or cold. This recipe serves 8.
