Recipe - Chocolate Dipped Almond Biscotti

Ingredients:

One half cup Whole almonds, toasted
1/3 cup Unsalted butter
2 Whole eggs, large
1 teaspoon Vanilla extract
2 One fourth cup All purpose flour
1 One half teaspoon Baking powder
One fourth teaspoon Salt
1 cup Chocolate, melted
Three fourths cup Sugar

Just got back from the Disney Institute again and as always, I had a
marvelous time. You guys have got to go! I took: Imagineering!, Radio
Drama, Outdoor Photography, Celebrations!, Boxing Aerobics, Animation
Sampler, Romantic Dinners, Canoe Adventures and Taste of the Word: Bayou.

Celebrations: Holiday Brunch: Celebrations is a class that shows you how to
have a dining event that not only tastes good and looks good but is
generally enjoyable. Fitting with the holiday season, we worked on a
holiday brunch. Aside from these recipes, we learned about table
presentation, planning and tricks to make the event memorable. We also
created several types of food related decorations.

Cream butter and sugar together. Add in eggs, vanilla, salt and baking
powder. Add in flour one cup at a time, and add in whole toasted almonds.

Shape into 2 flat loaves approximately 1inch high and 2 inches wide. Bake
at 325 degrees F for 25 minutes or until golden brown.

Remove from oven, and slide off the baking pan on to a cutting board. Cut
loaves into 1/2inch thick slices and place them back onto backing pan,
laying them on their side.

Return baking pan to oven and bake for another 10 minutes or until crisp.
Remove from oven and cool completely.

Melt one cup of chocolate in microwave, stirring every 10 seconds until
completely melted.

Dip half of the cooled biscotti into chocolate and set on cooling rack to
dry.

Serve at a brunch or give as a gift.

These can be made several days in advance.

Note: Drizzle white chocolate on the dipped part of the Biscotti to
decorate.
