Recipe - Chocolate Amaretto Cheesecake (Low-Fat)

6 Chocolate wafers; crushed
1 pack (8oz) light cream cheese
1 cup Sugar
1 cup 1% low fat cottage cheese
1/3 cup Unsweetened cocoa
One fourth cup Flour
One fourth cup Amaretto (brandy; creme de
menthe; or kahlua may also
be substituted)
1 teaspoon Vanilla
One fourth teaspoon Salt
1 Egg
2 tablespoon Chocolate minimorsels

From the Light & Easy Cooking Collection, Oxmoor House 1990 Sprinkle
chocolate wafer crumbs in bottom of a 7 inch springform pan. Set aside.
Position knife blade in food processor bowl; add cream cheese and next
seven ingredients, processing until smooth. Add egg and process until just
blended. Fold in chocolate morsels. Slowly pour mixture over crumbs in
pan. Bake at 300 degrees for 6570 minutes, or until cheesecake is set. If
using an 8 inch pan, bake only 4550 minutes. Let cool in pan on wire rack.
Cover and chill at least 8 hours. Yield: 12 servings (about 200 calories,
7.9 grams of fat)
