Recipe - Chitlin Salad

2 cup Cooked chitterlings
(chitlins) in sm. pieces
Juice of One half lemon
One half cup Diced celery
One half To Three fourths cup
Salt and pepper to taste
Lettuce
Paprika
Mayonnaise
Sprinkle the chitterlings with lemon juice and let stand for at least 1
hour. Add celery, mayonnaise, salt and pepper. Serve on beds of lettuce.
Dust with paprika. yield: 23 servings
