2 Chipotle chiles
2 Sprigs fresh thyme
1 pt White wine vinegar
2 chipotles + 2 sprigs fresh thyme in 1 pt white wine vinegar. Let steep
in a cool, dark place (not the fridge) for at least a week before using.
