Recipe - Chinese Chicken Salad - Weight Watchers

One half cup Pineapple chunks (no sugar);
reserve juice
1 tablespoon Cider or rice vinegar
1 tablespoon Soy sauce
1 One half teaspoon Dijonstyle mustard
1 teaspoon Peanut or vegetable oil
One fourth teaspoon Seasoned salt
6 ounce Chicken breast; skinned,
boned; cooked and cut into
thin strips
2 cup Lettuce; shredded
One fourth cup Green onions; chopped
2 tablespoon Parsley; chopped
One fourth cup Green pepper
1 One half ounce Water chestnuts; cut or sliced up
1 Green onion; trimmed, cut
lengthwize into 4 strips
One half teaspoon Sesame seed; toasted

In medium glass (not aluminum) bowl combine pineapple juice (reserved from
can) vinegar, soy sauce, mustard, oil, and seasoned salt. Add chicken and
toss to coat. Cover with plastic wrap and refrigerate for 1 hour. Toss
mixture occasionally. In another bowl combine lettuce, cut or sliced up green onions,
and parsley and toss to comvine. Cover with plastic wrap and refrigerate
until ready to use. To serve, line serving platter with lettuce mixture.
Spoon chicken mixture onto lettuce mixture and top chicken with pineapple
chunks, bell pepper, and water chestnuts; garnish with green onion and
sprinkle with sesame seed. 245 calories/serving.
