1 pound Pork; ground
2 lg Onions; chopped
4 cl Garlic; minced
1 md Pepper; sweet red; chopped
1 md Pepper; green; chopped
1 cup Celery; chopped
2 cn Tomatoes; minced ; with liquid
14 One half oz. cans
1 cn Beans; kidney; drained and
rinsed, 16 oz. can
1 cn Tomato paste; 6 oz.can
Three fourths cup Water
2 teaspoon Sugar; brown
1 teaspoon Oregano; dried
1 teaspoon Chili powder
One fourth teaspoon Red pepper flakes; dried
One fourth teaspoon Cayenne pepper
ds Hot pepper sauce
In a Dutch oven, brown pork and onions until pork is no longer pink;
drain. Stir in the garlic, peppers and celery. Cook for 5 minutes. Add
remaining ingredients; bring to a boil. reduce heat; cover and simmer for
45 minutes. Makes about 2 One half quarts.
