Recipe - Chile Corn Bake

2 cup Yellow cornmeal
1 cup Milk
4 Eggs
2 teaspoon Baking powder
1 teaspoon Salt
2 pack (10oz. each) Frozen corn,
thawed and drained
2 cup Diced red peppers
1 cn (4oz.) ORTEGA minced green
chiles or minced jalapenos
2 cup Shredded cheddar cheese
(4 oz.)
x Sour cream and/or cut or sliced up
green onions (scallions),
for garnish
In medium bowl, mix cornmeal, milk, eggs, baking powder and salt until well
blended. Stir in corn, red peppers, chiles and cheese. Pour into lightly
greased 13 x 9 x 2inch baking pan. Bake at 350 degrees F. for 40 minutes
or until firm. Cool slightly. Serve hot topped with sour cream and green
onions, if desired.
