Recipe - Chicken In Lime

1 pound Skinless chicken breasts

1 cup Chopped onion
1 Garlic clove minced
One half teaspoon Ground cumin
One half teaspoon Crushed coriander seed
One fourth teaspoon Tumeric
1/8 teaspoon Cayenne pepper
2 tablespoon Soy sauce, low sodium
2 Limes
Trim all visible fat from chicken breasts. Heat a nonstick skillet over
medium heat until hot. Away from the heat, coat with cooking spray. Add
breasts, onion, and garlic. Saut=E9= until breasts are browned, about 8
minutes, turning once. Add seasonings and soy sauce. Reduce heat; cover;
cook until chicken is fork tender and no longer pink, about 1520 minutes.
Cut one lime in quarters; halve the other. Place chicken on serving dish;
top with the sauce from the pan; sprinkle with juice from the halved lime
(about 2 Tbsps). Serve with the lime quarters.
