5 pound Stewing hen, cut up
One half cup Shortening
1 cup Chopped onion
One half cup Chopped fresh parsley
One half teaspoon Pepper
2 pound Uncooked shrimp
One half cup Chopped green onion
3 One half teaspoon Salt
One half cup Flour
2 tablespoon Worcestershire sauce
1 tablespoon Lemon juice
One half teaspoon Thyme
One half cup Chopped celery
1 teaspoon File powder
Sprinkle chicken with 1.5 tsp of salt. Melt shortening in a large heavy
pot. Add chicken pieces; brown, turning on all sides, for about 15 minutes
Remove chicken.
Stir flour into hot fat in wich chicken was browned. Stir constantly,
keeping heat low, until flour is dark brown. Add chopped
