Recipe - Chicken And Pea Pod Stir-Fry

3 cup Hot cooked rice
2 tablespoon Cornstarch
1 teaspoon Sugar
1 cup Water
3 tablespoon Soy sauce
2 tablespoon Oil
1 cup Juliennecut carrots
2 cup Fresh snow pea pods or sugar
snapped peas; or 6 oz. pkg
frozen pea pods, thawed and
drained
One half cup Sliced green onions
2 tablespoon Grated gingerroot
2 cup Cubed; (Three fourths inch) cooked
chicken
In a small bowl, combine cornstarch and sugar; blend well. Add water and
soy sauce; blend until smooth. Set aside.
Heat oil in large skillet or wok over mediumhigh heat until hot. Add
carrots; stir to coat. Cover; cook 3 minutes. Add pea pods, onions and
gingerroot; cook and stir 3 to 4 minutes or until vegetables are crisp
tender.
Stir in chicken and cornstarch mixture; cook and stir until mixture
thickens and is thoroughly heated. Serve over rice. Makes 3 servings.
