Recipe - Chicken And Cortland Apple Couscous

4 Boned and skinned chicken
breast halves, cook &
chopped
2 cup Couscous; dry
2 Three fourths cup Fatfree chicken broth;
boiling
One half cup Golden raisins
One half cup Slivered almonds; toasted
2 Apples; peeled and chopped
One half teaspoon Coriander
One fourth teaspoon Ground cinnamon
1/8 teaspoon Ground cloves
Preheat oven to 400F. Combine all ingredients in a 9x13x2 inch glass baking
pan. Cover with foil and bake for 25 minutes.
The original recipe called for 2 One half cup stock and One fourth cup unsalted butter. I
have adapted it to reduce the fat.

Carbohydrate; 26mg Cholesterol; 215mg Sodium
