Recipe - Chicken A La King

3 cup Chicken, cooked
2 cup Heavy cream
1 cup Mushroom, cut or sliced up
1 Green pepper, cut or sliced up
1 Pimento, chopped
1 One half tablespoon Flour
One half cup Chicken broth
One half cup Sherry
1 teaspoon Salt
One fourth teaspoon Paprika
1 ds Cayenne
4 Egg yolks
3 tablespoon Butter
Melt butter in saucepan; Add green peppers, mushrooms and pimentos. Simmer
5 minutes. Add flour and blend in well. Add Three fourths of the heavy cream and all
the chicken broth. Cover and cook over low heat until thickened, stirring
constantly. Stir in sherry, salt, cayenne and paprika. Beat egg yolks and
combine with rest of heavy cream. Stir slowly into sauce. Add chicken and
heat but do not boil. Serve on toast or shells.
