Recipe - Chicken Upside Down

Ingredients:

2/3 cup Butter or margarine
2/3 cup Allpurpose flour
3 cup Chicken broth
2 cup Milk
1 teaspoon Salt
One half teaspoon Pepper
2 Tbps lemon juice
2 One half cup Cooked chicken; cut into 1/2
inch cubes
1 Egg
2/3 cup Milk
3 tablespoon Vegetable oil
1 cup Selfrising cornmeal
1 teaspoon Sugar

Melt butter in a saucepan over medium heat. Add flour, stirring constantly.
Gradually add chicken broth and milk cook over medium heat, stirring
constantly, until thickened and bubbly. Stir in salt, pepper, lemon juice,
and chicken. Pour mixture into greased 13x9 inch baking dish. Combine egg
and remining ingredients, stirring well; pour over chicken. Bake at 350 for
5060 minutes or until golden brown. Makes 68 servings**

Sometimes I add vegetables also. It's great with a green salad and homemade
bread.
