Recipe - Chicken Satay With Cucumber Relish

1 pound Boneless skinless chicken
breast halves
1 teaspoon Minced garlic
One half cup Lime juice
1 tablespoon Honey
1 tablespoon Grated fresh ginger
1 tablespoon Grated lime rind
CUCUMBER RELISH
1 cup Peeled; seeded cucumber,
finely minced
1 teaspoon Minced garlic
2 tablespoon Minced cilantro
One half cup Seeded tomatoes; finely
minced
1 small Jalapeno chile; seeded
and minced
2 tablespoon Rice vinegar

1. Cut chicken into 1inch pieces and place in a large, shallow pan. In a
small bowl mix together garlic, lime juice, honey, ginger, and rind. Pour
over chicken and let marinate for 30 minutes, tossing frequently.
2. Preheat broiler or grill. Assemble chicken on short skewers. Broil or
grill until browned (5 minutes). Serve immediately with Cucumber Relish.
Cucumber Relish: Combine all ingredients in a bowl. Let marinate 15 minutes
before serving. Makes about 2 cups.
